Edward Kidder was a famous pastry cook who taught the culinary arts, mainly to young ladies, in London's Queen Street and Holburn in the 1700's. The recipes in this reprint of his 18th century recipe book or handbook for the professional cook is historically important, writes Jane Jakeman in her introduction. This book 'rescues' a fascinating collection of recipes and provides a bit of social history.
